Vegetarian Stir Fry Udon

Ingredients

  • 16 oz. Amoy Udon Noodles, prepared according to package directions (thawed and ready to use, boil or microwave)
  • 2 Tbsp. Soy sauce
  • 1 tsp. Ginger, diced
  • 1 tsp. Garlic, diced
  • 1 Tbsp. Sesame oil
  • ¼ cup Onion, sliced
  • ¼ cup Red pepper, sliced
  • 1/4 cup Green cabbage, sliced
  • ¼ cup Carrot, julienned
  • 2 Tbsp. Green onion, sliced
  • 8 oz. Stir fry tofu / any vegetarian protein, cooked and sliced

Instructions

  1. Add Sesame oil to heated Wok.
  2. Sautee onion, red pepper, carrots, green cabbage, and tofu or vegetarian protein in the sesame oil.
  3. Add Amoy Udon Noodles to the vegetables.
  4. Pour soy mixture over noodles.
  5. Sautee until noodles are well glazed.
